CMC - Carboxymethyl cellulose

CMC - Carboxymethyl cellulose (CMC) or cellulose gum is used in food as a viscosity modifier or thickener, and to stabilize emulsions in various products including ice cream. It is also a constituent of many non-food products, such as personal lubricants, toothpaste, laxatives, diet pills, water-based paints, detergents, textile sizing, and various paper products.

CMC is used essentially because it has high viscosity, is nontoxic, and is usually considered to be hypoallergenic, as the primary source fiber is usually softwood pulp or cotton linter. CMC is used quite often in gluten free and low fat food products. In detergents, it can be used as a soil suspension polymer made to deposit onto cellulosic fabrics, creating a negatively charged barrier to dirt in the wash solution. CMC is also used as a lubricant in many types of artificial tears.

A higher purification process is used to remove salts producing pure CMC used for food, pharmaceutical, and dentifrice (toothpaste) manufacture. A semi-purifiedgrade is also produced, for use in paper applications, mostly to restore archival documents. CMC is also used in the pharma industry as a thickening agent, and in the oil-drilling industry as an important ingredient of drilling mud, for its action as a viscosity modifier and water retention agent. Further CMC is used to achieve cold stability in wine. This innovation has demonstrated ability to save several megawatts of electricity which is used to chill wine in warmer climates
